The ingredients that make oil and water behave
Left alone, an oil phase and a water phase separate. Emulsifiers sit on the boundary between them with a water-loving head and an oil-loving tail, holding the two together so a cream stays a cream from first pump to last. Surfactants perform the same trick in reverse inside a cleanser, lifting sebum and sunscreen into water so both rinse away.
