What holds a moisturiser together

Glyceryl stearate, a fatty acid attached to glycerin, sits at the boundary between the two and holds them in suspension, which is why a cream stays uniform for years instead of splitting into layers. It contributes emollience of its own as well, softening the skin as it goes.
