The oil-friendly form of vitamin C
Plain ascorbic acid is water-soluble and notoriously unstable. Attaching it to palmitic acid produces ascorbyl palmitate: a lipid-compatible ester that sits comfortably in oil phases and emulsions, where it doubles as protection for the other oils in the jar.
